These Asian Chicken Lettuce Cups are a quick and healthy dinner option, featuring a savory ground chicken filling with water chestnuts and ginger, served in crisp lettuce cups. Ingredients

  • 1 pound ground chicken
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small onion, diced fine
  • 1 can water chestnuts, drained and chopped
  • 2 green onions, sliced thin
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce
  • 1 tablespoon hoisin sauce
  • 1 head butter lettuce or iceberg lettuce
  • 1 tablespoon sesame seeds, toasted
  • Fresh cilantro leaves
  • Extra hoisin sauce for drizzling

Instructions

  1. Wash and separate lettuce leaves. Pat dry and arrange on a platter. Keep cold and crisp.
  2. Heat sesame oil in a large skillet over medium-high heat. Add onion and cook for 2 minutes until translucent.
  3. Add garlic and ginger, cook for 30 seconds until fragrant.
  4. Add ground chicken to the pan. Break apart with a wooden spoon and cook until browned, about 5 minutes.
  5. Stir in water chestnuts, soy sauce, rice vinegar, chili garlic sauce, and hoisin sauce. Cook for 2 more minutes until combined.
  6. Remove from heat and stir in green onions.
  7. Spoon warm filling into lettuce cups. Top with toasted sesame seeds and fresh cilantro. Drizzle extra hoisin sauce if desired.

Notes

Toast sesame seeds in a dry pan for 30 seconds before sprinkling. For gluten free, use tamari and check hoisin sauce label. Store filling separately from lettuce for meal prep. Reheat filling in a skillet.
