This is a sweet and savory lunchtime game-changer that feels both special and effortless. It combines crisp fruit and tender chicken with a quick honey mustard dressing for a celebration of fresh textures and bright flavors.

Ingredients

Scale
  • 2 cups cooked chicken breast, shredded or diced
  • 1 large crisp apple (like Honeycrisp or Fuji), cored and diced
  • 1 cup red seedless grapes, halved
  • 2 stalks celery, finely diced
  • 1/3 cup chopped walnuts or pecans, toasted
  • 2 green onions, thinly sliced
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded chicken, diced apple, halved grapes, diced celery, and green onions.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, honey, Dijon mustard, lemon juice, and garlic powder until smooth and creamy. Season generously with salt and pepper.
  3. Pour the dressing over the chicken and fruit mixture. Gently fold everything together until evenly coated.
  4. Fold in the toasted walnuts. Cover and let the salad rest in the refrigerator for at least 15-20 minutes before serving.

Notes

For best results, dice the apple just before mixing to prevent browning. Letting the salad chill allows the flavors to develop fully. Store in an airtight container in the refrigerator for up to 3-4 days.
