Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 cup unsweetened almond milk
  • 1/4 cup plain unsweetened Greek yogurt
  • 1 to 2 teaspoons pure maple syrup
  • 1/4 teaspoon pure vanilla extract
  • 1/8 teaspoon almond extract
  • 1 tablespoon unsweetened shredded coconut
  • 1 tablespoon chopped raw almonds
  • 1 tablespoon mini dark chocolate chips

Instructions

  1. In a 12 to 16-ounce jar, combine the oats, chia seeds, and cocoa powder.
  2. Add the almond milk, Greek yogurt, maple syrup, vanilla extract, and almond extract.
  3. Seal the jar and shake vigorously for 30 seconds, or stir until completely combined and no dry spots remain.
  4. Refrigerate for at least 4 hours or overnight.
  5. Before serving, stir the oats and top with shredded coconut, chopped almonds, and dark chocolate chips.

Notes

For a sugar-free version, replace maple syrup with liquid stevia or monk fruit. For a vegan version, use plant-based yogurt and dairy-free chocolate chips. The oats keep in the refrigerator for 4-5 days. Add toppings just before eating to maintain crunch.
