  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon kosher salt
  • 1 lemon, zested and juiced
  • Freshly chopped parsley or thyme for garnish

Instructions

  1. Pat the chicken pieces thoroughly dry with paper towels. If using large chicken breasts, slice them horizontally into thinner cutlets for even cooking.
  2. In a small bowl, combine the lemon pepper seasoning, garlic powder, onion powder, smoked paprika, and salt.
  3. Place the chicken in a large bowl, drizzle with olive oil, and sprinkle the seasoning mixture all over. Use your hands to massage the seasoning into the chicken. Let sit for 5-10 minutes if time allows.
  4. Preheat your air fryer to 380°F (193°C) for about 3 minutes.
  5. Arrange the chicken in the air fryer basket in a single layer, ensuring no pieces overlap. Air fry for 10-14 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and the exterior is golden and crisp.
  6. Immediately after removing from the air fryer, squeeze the fresh lemon juice over the hot chicken. Garnish with fresh parsley or thyme and extra lemon zest if desired.

For a homemade lemon pepper blend, mix 2 tbsp cracked black pepper, 1 tbsp dried lemon zest, 2 tsp salt, 1 tsp garlic powder, and 1/2 tsp onion powder. Avoid overcrowding the air fryer basket; cook in batches if necessary to ensure crispiness. Always add the fresh lemon juice after cooking for the brightest flavor.
