Ingredients

Scale
  • 1 bag (about 16-20) mini sweet peppers
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup cooked and crumbled bacon or real bacon bits
  • 1 green onion, finely sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Pinch of salt and black pepper to taste

Instructions

  1. Slice each mini pepper in half lengthwise and use a small spoon to scrape out the seeds and membranes.
  2. In a medium bowl, combine the softened cream cheese, shredded cheddar, bacon, green onion, garlic powder, smoked paprika, salt, and pepper. Mix until well-combined and creamy.
  3. Using a small spoon or a piping bag, generously fill each pepper half with the cheese mixture.
  4. Arrange the stuffed peppers on a platter and serve immediately.

Notes

For best results, ensure the cream cheese is softened to room temperature for easy mixing. The peppers are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
