  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • For the topping:
  • ⅓ cup pepitas (pumpkin seeds)
  • 2 tablespoons brown sugar
  • 1 tablespoon butter, melted
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
  3. In a large bowl, whisk pumpkin puree, sugars, eggs, oil, vanilla, and milk until smooth.
  4. Fold dry ingredients into wet just until combined. Do not overmix.
  5. In a small bowl, mix pepitas, brown sugar, melted butter, and cinnamon to make the topping.
  6. Divide batter among muffin cups, filling each ¾ full. Top with pepita mixture.
  7. Bake for 20–22 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pan 5 minutes, then transfer to wire rack to cool completely.

Notes

To make muffins rise higher, bake at 425°F for the first 5 minutes, then reduce to 350°F for the remaining bake time. These muffins freeze well—wrap individually for grab-and-go snacks!
