Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • ¼ cup pumpkin puree (not pie filling)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. In a medium saucepan, combine sugar and water. Bring to a gentle boil over medium heat, stirring until sugar dissolves (3–5 minutes).
  2. Whisk in pumpkin puree, pumpkin pie spice, and salt. Reduce heat and simmer for 10 minutes, stirring occasionally.
  3. Remove from heat and stir in vanilla extract. Let cool for 5 minutes.
  4. Strain through a fine-mesh sieve into a clean bowl or measuring cup to remove any pulp.
  5. Cool completely, then transfer to an airtight bottle or jar. Store in the refrigerator for up to 2 weeks. Shake well before each use.

Notes

Substitute brown sugar for deeper flavor or use monk fruit for a sugar-free version. This syrup is delicious in coffee, tea, oatmeal, and even over ice cream.
