These Weight Watcher pumpkin muffins are moist, flavorful, and just 3–4 points each! Made with cake mix, pumpkin puree, and applesauce, they’re the perfect fall treat that fits into a healthy lifestyle.

Ingredients

  • 1 box spice cake mix (15.25 oz)
  • 1 can pure pumpkin puree (15 oz) – not pumpkin pie filling
  • ⅓ cup unsweetened applesauce
  • ½ cup water
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Optional: 2 tablespoons mini chocolate chips or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners or spray with non-stick spray.
  2. In a large bowl, combine cake mix, pumpkin puree, applesauce, water, pumpkin pie spice, vanilla extract, and cinnamon. Stir just until combined.
  3. Divide batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle optional toppings if using.
  4. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

To make mini muffins, reduce baking time to 12–15 minutes. Store leftovers in the fridge or freezer for a quick and healthy snack on the go.
