Ingredients
2 cups pancake mix
1 ½ cups milk
1 egg
2 tbsp vegetable oil or melted butter
1 tsp vanilla extract (optional)
1 tbsp sugar (optional)
Instructions

Preheat your waffle iron according to the manufacturer’s directions.

In a mixing bowl, whisk together the egg, milk, oil or butter, and vanilla extract.

Slowly stir in the pancake mix until just combined. Do not overmix.

Let the batter rest for 2–3 minutes to activate the leavening agents.

Lightly grease the waffle iron with oil or nonstick spray.

Pour about ⅔ cup batter (adjust based on your iron) into the center of the iron.

Close the lid and cook for 3–5 minutes, or until golden brown and crisp.
