  • ¼ cup olive oil
  • 3 tablespoons lemon juice (fresh)
  • 2 tablespoons soy sauce (low-sodium)
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes (optional)
  • 2 pounds boneless, skinless chicken breasts or thighs

Instructions

  1. Make the Marinade: In a medium bowl, whisk together olive oil, lemon juice, soy sauce, honey, garlic, Dijon, paprika, oregano, salt, pepper, and red pepper flakes until well combined.
  2. Marinate: Place chicken in a zip-top bag or glass dish. Pour marinade over it, seal or cover, and refrigerate for at least 30 minutes (up to 24 hours).
  3. Preheat Grill: Let chicken sit at room temp for 20 minutes. Preheat grill to medium-high (375–450°F).
  4. Grill Chicken: Remove chicken from marinade and grill for 5–7 minutes per side, or until internal temperature reaches 165°F. Discard used marinade.
  5. Rest & Serve: Let grilled chicken rest for 5 minutes before slicing. Serve with your favorite sides or slice for salads, wraps, or bowls.

Notes

Make ahead tip: Freeze raw chicken in marinade for up to 3 months. Thaw overnight in fridge and grill as directed. For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
