Juicy, flavorful, and incredibly simple—this chicken marinade is a game-changer for busy weeknights or weekend grilling. The perfect balance of sweet, tangy, and savory flavors makes this a family favorite.

Ingredients

Scale
  • ¼ cup olive oil
  • 3 tablespoons lemon juice (fresh)
  • 3 tablespoons soy sauce (low-sodium)
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon black pepper
  • 23 pounds boneless skinless chicken breasts or thighs

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, soy sauce, honey, Dijon mustard, garlic, and seasonings until well combined.
  2. Place chicken in a zip-top bag or dish. Pour the marinade over the chicken and coat evenly.
  3. Seal and refrigerate for at least 30 minutes, ideally 2–8 hours. Do not exceed 24 hours.
  4. Remove chicken from marinade and discard excess liquid. Cook using your preferred method (grill, bake, stovetop, or air fryer).
  5. Cook until internal temperature reaches 165°F. Rest chicken for 5 minutes before slicing and serving.

Notes

For a gluten-free option, use tamari instead of soy sauce. Want it spicier? Add more red pepper flakes or a splash of hot sauce. This marinade also works for pork and turkey!
