  • pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 3 tablespoons Thai red curry paste
  • 2 tablespoons fish sauce
  • 3 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons lime juice
  • ¼ cup coconut milk
  • 2 tablespoons vegetable oil
  • ⅓ cup chopped cilantro
  • 3 green onions, thinly sliced
  • 1 red chili, thinly sliced (optional, for garnish)
  • Lime wedges for serving

Instructions

  1. In a large bowl, whisk together curry paste, fish sauce, brown sugar, garlic, ginger, lime juice, and coconut milk. Add chicken and toss to coat. Marinate for at least 30 minutes in the fridge.
  2. Remove chicken from fridge and rest at room temperature for 10 minutes. Preheat oven to 400°F and line a baking sheet with parchment paper.
  3. Heat oil in a large skillet over medium-high. Working in batches, sear chicken 2-3 minutes per side until browned.
  4. Transfer chicken to baking sheet and bake for 5-7 minutes, or until internal temp reaches 165°F.
  5. Garnish with cilantro, green onions, and optional red chili. Serve with lime wedges.

Notes

For a vegetarian version, use firm tofu or cauliflower. Substitute sriracha with spices if red curry paste is unavailable. Delicious served with sweet chili dipping sauce!
