This creamy slow cooker keto chicken soup is the ultimate comfort food for busy weeknights. Packed with tender chicken, cauliflower, and rich cream cheese, it is a satisfying low carb meal that cooks itself while you go about your day.

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 8 ounces full-fat cream cheese, softened and cubed
  • 4 cups chicken broth, preferably low-sodium
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh cauliflower florets, chopped small
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Optional: 1 cup fresh spinach, 1/2 cup grated Parmesan cheese for serving, chopped fresh parsley for garnish

Instructions

  1. Prepare the Base: Place the chicken breasts or thighs into the slow cooker. Scatter the diced onion, minced garlic, and cauliflower florets around the chicken.
  2. Add Liquids and Seasonings: Pour the chicken broth over everything. Add the dried thyme, rosemary, a good pinch of salt, and black pepper. Dot the top with the butter.
  3. Slow Cook: Cover and cook on LOW for 5-6 hours or on HIGH for 2.5-3 hours. The chicken should be tender and easy to shred.
  4. Shred the Chicken: Carefully remove the chicken from the slow cooker and place it on a cutting board. Use two forks to shred it completely.
  5. Create the Creamy Sauce: Return the shredded chicken to the slow cooker. Add the cubed cream cheese and heavy cream. Stir gently until the cream cheese begins to melt into the soup.
  6. Final Simmer: Cover and cook on HIGH for an additional 20-30 minutes, stirring occasionally, until the soup is hot and creamy. If using, stir in the fresh spinach during the last 5 minutes of cooking until it wilts.
  7. Serve: Taste and adjust seasoning with more salt and pepper if needed. Ladle into bowls and garnish with Parmesan cheese and fresh parsley.

Notes

For a dairy-free version, use Kite Hill cream cheese style spread and full-fat coconut milk instead of heavy cream. You can swap the cauliflower for broccoli or radishes. For an extra smooth texture, use an immersion blender to briefly pulse the soup after adding the cream cheese.
