  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 2 pounds baby potatoes (halved if large)
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1/4 cup butter
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup heavy cream (added in last 30 minutes)

Instructions

  1. Season chicken with salt, pepper, garlic powder, and onion powder. Place in slow cooker.
  2. Add halved baby potatoes on top of the chicken.
  3. Whisk together chicken broth, minced garlic, Italian seasoning, and half the Parmesan cheese. Pour over chicken and potatoes.
  4. Dot with butter and cover. Cook on LOW for 7–8 hours or HIGH for 3–4 hours.
  5. In the last 30 minutes, stir in heavy cream and remaining Parmesan. For a thicker sauce, stir in cornstarch slurry (2 tbsp cornstarch + 2 tbsp cold water).
  6. Garnish with fresh parsley and extra Parmesan before serving.

Notes

Use cauliflower instead of potatoes for a low-carb version. Coconut cream can substitute heavy cream for a dairy-free twist. Add carrots or green beans for extra veggies.
