Ingredients

  • Sweet Potatoes: 2 large, peeled and cubed into 1-inch pieces
  • Smoked Sausage: 1 pound (4-5 links), sliced into rounds
  • Broccoli: 1 large head, cut into florets
  • Red Onion: 1 medium, sliced
  • Olive Oil: 2 tablespoons
  • Salt and Black Pepper: To taste
  • For the Honey Garlic Glaze:
  • Honey: 1/4 cup
  • Soy Sauce: 3 tablespoons
  • Minced Garlic: 3 cloves
  • Apple Cider Vinegar: 1 tablespoon
  • Dried Thyme: 1/2 teaspoon

Instructions

  1. Prep the Oven and Pan: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Combine Veggies and Sausage: Toss sweet potatoes, sausage, broccoli, and red onion with olive oil, salt, and pepper. Spread in single layer on baking sheet.
  3. Roast: Place in preheated oven and roast for 15 minutes.
  4. Make the Honey Garlic Glaze: While roasting, whisk together honey, soy sauce, garlic, apple cider vinegar, and thyme in small bowl.
  5. Glaze and Finish Roasting: Remove pan from oven, drizzle with honey garlic sauce, toss to coat, and return to oven for 10-15 minutes until sweet potatoes are fork-tender and sausage edges are crispy.

Notes

Don’t overcrowd the pan. Use two baking sheets if needed to ensure proper roasting and caramelization. For gluten-free option, use tamari instead of soy sauce. Leftovers keep well in refrigerator for up to 4 days.
