  • 1 pound smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 large bell pepper (any color), chopped
  • 1/2 a large red onion, chopped
  • 1/3 cup honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Optional garnish: chopped fresh parsley or green onions

Instructions

  1. Preheat your oven to 400°F (200°C). While it heats, peel and cube the sweet potatoes, slice the sausage, and chop the bell pepper and onion.
  2. On a large, rimmed baking sheet, toss the sweet potato cubes with the olive oil. Add the sliced sausage, bell pepper, and onion. Spread everything into a single, even layer.
  3. Place the sheet pan in the preheated oven and roast for 15 minutes. This gives the potatoes a head start on getting tender.
  4. While the pan is in the oven, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, smoked paprika, and black pepper in a small bowl or measuring cup.
  5. After 15 minutes, carefully remove the hot pan from the oven. Pour the honey garlic sauce over everything and use a spatula or tongs to toss everything thoroughly, ensuring it’s well-coated. Spread it back into an even layer and return the pan to the oven.
  6. Roast for another 10-15 minutes, or until the sweet potatoes are fork-tender and the sauce has thickened and glazed the sausage and vegetables. The edges of the potatoes will be beautifully caramelized.
  7. Garnish with fresh parsley or green onions if desired, and serve immediately.
