This easy Rotel dip recipe is the ultimate lifesaver for any host. With just four simple ingredients, it creates a creamy, tangy, and slightly spicy dip that disappears at every party.

Ingredients

  • Cream Cheese (16 ounces): Use two blocks of full-fat cream cheese, softened to room temperature.
  • Rotel Tomatoes (1 can, 10 ounces): Use the entire can, undrained.
  • Ranch Seasoning Mix (1 packet, 1 ounce): Dry seasoning packet for signature flavor.
  • Shredded Cheese (2 cups): Colby Jack, Mexican blend, or cheddar work well.

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a medium baking dish with non-stick spray.
  2. In a large bowl, beat softened cream cheese until smooth. Add undrained Rotel tomatoes and ranch seasoning, mixing until fully incorporated.
  3. Stir in 1 ½ cups shredded cheese, reserving ½ cup for topping.
