This Quick Spicy Gochujang Noodle Soup is a bold, comforting Korean-inspired meal that comes together in just 25 minutes. Packed with chewy noodles, aromatic broth, fresh vegetables, and savory heat from gochujang, it’s your new weeknight favorite.

  • 2 tablespoons gochujang paste (Korean chili paste)
  • 6 cups chicken or vegetable broth
  • 8 oz ramen, udon, or rice noodles
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 green onions, sliced (whites and greens separated)
  • 1 medium carrot, julienned
  • 1 cup mushrooms, sliced (shiitake or button)
  • 2 cups baby spinach or chopped bok choy
  • 1 tablespoon rice vinegar
  • Optional: cubed tofu, shredded chicken, or soft-boiled egg
  • Garnish: sesame seeds, sliced green onion tops, cilantro

Instructions

  1. In a large pot over medium heat, warm the sesame oil. Add garlic, ginger, and white parts of green onions. Sauté for 1–2 minutes until fragrant.
  2. Stir in gochujang paste and cook for 30 seconds to bloom the flavor. Add broth and soy sauce. Bring to a gentle boil.
  3. Add carrots and mushrooms. Simmer for 3–4 minutes until slightly softened.
  4. Add noodles and cook according to package directions, usually 3–5 minutes, until tender but chewy.
  5. Stir in spinach or bok choy and rice vinegar. Cook 1 minute until greens are wilted.
  6. If using, add tofu or pre-cooked chicken and heat through. For eggs, slice soft-boiled egg in half and add to serving bowls.
  7. Ladle soup into bowls and top with green onion tops, sesame seeds, and cilantro. Serve hot.

Notes

For a less spicy soup, reduce gochujang to 1 tablespoon and balance with a dash of honey. Warm serving bowls before adding soup to keep it hot longer.
