  • 2 packages (7 oz each) fresh or frozen udon noodles
  • 3 tablespoons vegetable oil, divided
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons freshly ground black pepper
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 cup beef broth
  • 2 green onions, sliced (for garnish)
  • Optional: 1 sliced bell pepper or handful of snap peas

Instructions

  1. Slice beef thinly and mix soy sauce, oyster sauce, sugar, and beef broth in a small bowl. Set aside.
  2. Cook udon noodles according to package instructions. Drain, rinse, and toss with a bit of oil to prevent sticking.
  3. Heat 2 tablespoons oil in a large wok or skillet. Sear beef in batches for 1–2 minutes. Set aside.
  4. Add remaining oil to pan. Stir-fry onions for 2 minutes. Add garlic and black pepper; stir 30 seconds.
  5. Pour in sauce, then add noodles. Toss to coat.
  6. Return beef to pan and stir until heated through and sauce thickens slightly.
  7. Serve hot, garnished with green onions.

Notes

For a vegetarian version, substitute beef with mushrooms or tofu and use vegetable broth. Adjust black pepper to taste for a milder or spicier flavor.
