  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 2 cups white chocolate chips
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
  3. Beat in egg and vanilla, then mix in pumpkin purée until well combined (mixture may look curdled).
  4. Gradually mix dry ingredients into wet ingredients just until combined.
  5. Fold in white chocolate chips and nuts (if using). Dough will be soft.
  6. Cover and chill dough for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Drop rounded tablespoons of dough 2 inches apart.
  8. Bake for 12–14 minutes until edges are golden and centers look slightly underdone. Cool on baking sheet for 5 minutes before transferring to wire rack.

Notes

Chilling the dough is essential for structure and flavor. Cookies taste even better the next day! For variation, use butterscotch chips or a sprinkle of sea salt on top before baking.
