  • 1 can (15 oz) pure pumpkin puree (not pumpkin pie filling)
  • 3 large eggs, room temperature
  • ⅓ cup vegetable oil
  • ¼ cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ½ cup mini chocolate chips (optional)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, mix the spice cake mix, cinnamon, nutmeg, cloves, and ginger.
  3. In a separate bowl, whisk together pumpkin puree, eggs, oil, water, and vanilla until smooth.
  4. Pour wet ingredients into dry and stir gently until just combined. Do not overmix.
  5. Fold in chocolate chips or nuts, if using.
  6. Divide batter evenly among muffin cups, filling about ¾ full.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  8. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Start at 425°F for 5 minutes, then reduce to 350°F for domed muffin tops. Substitute yellow cake mix + 2 tsp pumpkin pie spice if needed.
