  • 1 box spice cake mix (15.25 oz)
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix together the dry cake mix and pumpkin puree until fully combined. The dough will be thick!
  3. Fold in chocolate chips evenly.
  4. Use a cookie scoop or spoon to drop rounded portions of dough onto the baking sheets, spacing 2 inches apart. Flatten slightly with the back of a spoon.
  5. Bake for 12–14 minutes, until edges are set but centers still look soft.
  6. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

Optional: Sprinkle sea salt on top after baking for extra flavor. Makes about 24 cookies. Store in an airtight container for up to 4 days or freeze for up to 3 months.
