  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1¼ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 cups semi-sweet chocolate chips, divided
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang for easy lifting.
  2. In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).
  4. Add egg and vanilla; mix well. Stir in pumpkin puree (mixture may look slightly curdled—this is normal).
  5. Gradually mix in dry ingredients until just combined. Do not overmix.
  6. Fold in 1½ cups chocolate chips and optional nuts. Spread batter evenly into prepared pan.
  7. Sprinkle remaining ½ cup chocolate chips over the top.
  8. Bake 35–40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely in the pan. For clean cuts, chill for 30 minutes before slicing into bars.

Notes

These bars taste even better the next day as the flavors develop. Use dark chocolate chips for a richer flavor, or white chocolate for a fun twist. Freeze extras for quick treats!
