  • 4 large eggs, room temperature
  • 1⅔ cups granulated sugar
  • 1 cup vegetable oil
  • 15 oz can pure pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F and prepare a 15×10-inch jelly roll pan with parchment or non-stick spray.
  2. In a large bowl, mix eggs, sugar, oil, and pumpkin puree until smooth.
  3. Whisk dry ingredients in a separate bowl, then gently combine with wet ingredients until just mixed.
  4. Pour into pan and bake for 25-30 minutes, until a toothpick comes out clean.
  5. Cool completely before frosting.
  6. For frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar, vanilla, and salt. Mix until fluffy.
  7. Spread frosting evenly over bars. Chill for clean slicing, then serve.

Notes

For a lighter version, substitute half the oil with applesauce. You can also use 2½ teaspoons pumpkin pie spice instead of individual spices.
