Ingredients

  • 1 cup oat flour or whole wheat flour
  • 1/2 cup almond flour
  • 12 scoops protein powder (whey or plant-based)
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 tsp cinnamon (optional)
  • 12 eggs or egg whites
  • 1/2 cup milk or plant-based milk
  • 1/4 cup mashed banana or applesauce
  • 1 tsp vanilla extract

Instructions

  1. Mix all dry ingredients in a large bowl.
  2. In a separate bowl, whisk eggs, milk, banana/applesauce, and vanilla.
  3. Combine wet and dry ingredients and mix until just combined.
  4. Let batter rest for 5–10 minutes.
  5. Preheat a nonstick skillet over medium heat.
  6. Pour 1/4 cup of batter per pancake onto skillet.
  7. Cook for 2–3 minutes on each side or until golden brown.
  8. Serve with Greek yogurt, nut butter, or fresh berries.

Notes

For extra protein, add an additional scoop of protein powder and increase liquid. To make it vegan, use plant-based milk and flax eggs.
