Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 pound), cooked and sliced
  • 4 large whole wheat tortillas or flatbreads
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 medium cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup fresh spinach leaves
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. If starting with raw chicken, season with salt, pepper, and oregano. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–7 minutes per side until internal temp reaches 165°F. Rest for 5 minutes, then slice.
  2. While chicken rests, prep your vegetables: slice cucumber, halve cherry tomatoes, and thinly slice red onion. Wash and dry spinach.
  3. Warm tortillas or flatbreads in a skillet or microwave until pliable.
  4. Spread 2–3 tablespoons of tzatziki on each wrap. Layer with sliced chicken, spinach, cucumber, tomatoes, onion, olives, and feta. Drizzle with lemon juice and a bit of olive oil.
  5. Fold in the sides, then roll tightly from the bottom up. Slice in half if desired. Secure with parchment or toothpicks for serving.

Notes

Make it vegetarian by substituting grilled halloumi, chickpeas, or falafel for the chicken. Gluten-free wraps or large lettuce leaves work well for gluten-free diets. Use hummus in place of tzatziki for a dairy-free variation.
