These Juicy Garlic Parmesan Chicken Kebabs are bursting with bold garlic flavor, nutty Parmesan, and juicy grilled chicken. They’re the perfect crowd-pleasing dish for BBQs, parties, or easy weeknight dinners.

  • 2 pounds boneless, skinless chicken thighs, cut into 1.5-inch chunks
  • 2 bell peppers (red and yellow), cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch chunks
  • 8 ounces button mushrooms, stems removed
  • 1 zucchini, sliced into thick rounds
  • 1/2 cup olive oil
  • 4 garlic cloves, minced (or 2 tablespoons garlic paste)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh chopped parsley (for serving)
  • Additional grated Parmesan for garnish
  • Lemon wedges

Instructions

  1. In a large bowl, whisk together olive oil, garlic, Parmesan, lemon juice, oregano, basil, salt, pepper, and red pepper flakes.
  2. Add chicken to the marinade and coat well. Cover and refrigerate for at least 2 hours or overnight.
  3. Prepare vegetables and toss with a little olive oil, salt, and pepper.
  4. If using wooden skewers, soak them in water for 30 minutes. Thread chicken and vegetables onto skewers.
  5. Preheat grill to medium-high (375-400°F). Grill kebabs for 12-15 minutes, turning every 3-4 minutes, until chicken reaches 165°F.
  6. Let kebabs rest for 5 minutes. Sprinkle with parsley and extra Parmesan. Serve with lemon wedges.

Notes

Use chicken breasts for a leaner option, or swap chicken for tofu or halloumi for a vegetarian version. These kebabs also cook well in the oven or under the broiler!
