This homemade jerky seasoning is the secret to next-level beef jerky. Perfectly balanced with savory, sweet, and smoky flavors, it’s customizable and made entirely with pantry spices. Ideal for DIY jerky lovers and healthier than store-bought blends.

  • Dry Seasoning Blend:
  • 1/4 cup kosher salt
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons crushed red pepper flakes (adjust to taste)
  • 1 teaspoon ground coriander
  • 1 teaspoon mustard powder
  • 1 teaspoon Prague Powder #1 (optional, for shelf-stable jerky)
  • Liquid Add-In (per pound of meat):
  • 2 tablespoons water, soy sauce, or Worcestershire sauce

Instructions

  1. Make the Seasoning: In a medium bowl, whisk together all dry seasoning ingredients. Store any extra in an airtight container.
  2. Slice the Meat: Slice beef against the grain into thin strips (1/8–1/4 inch). Trim off all visible fat.
  3. Apply the Seasoning: Add 3 tablespoons of the seasoning blend per pound of meat to a zip-top bag, plus 2 tablespoons liquid. Massage to coat.
  4. Marinate: Seal and refrigerate for 8–24 hours, flipping halfway through to ensure even coating.
  5. Dry the Jerky: Pat meat dry and place on dehydrator trays. Dry at 160°F for 4–6 hours or until dry yet pliable.
  6. Cool & Store: Let jerky cool completely before storing in airtight containers.

Notes

For a spicier blend, increase crushed red pepper or add cayenne. This recipe is naturally keto and low-carb. Store extra seasoning blend in a cool, dry place for up to 3 months.
