Golden, crispy corn fritters loaded with melty cheese and sweet corn kernels. These easy fritters come together in just 25 minutes and make the perfect snack, side dish, or appetizer.

  • 1 cup all-purpose flour (or gluten-free 1:1 baking flour)
  • 1/2 cup finely grated sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped scallions or red onion
  • 1 large egg, lightly beaten
  • 1/3 cup milk (or unsweetened almond milk)
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • 23 tablespoons vegetable oil, for frying

Instructions

  1. Prepare the Corn Mixture: In a large mixing bowl, combine the corn, grated cheddar, Parmesan, and chopped scallions. In a separate small bowl, whisk together the egg and milk.
  2. Combine Dry and Wet Ingredients: Add the flour, baking powder, garlic powder, smoked paprika, salt, and pepper to the corn mixture. Stir gently to coat everything evenly. Pour the egg and milk mixture over the dry ingredients and stir until just combined. Let the batter rest for 5 minutes.
  3. Heat the Oil: While the batter rests, heat 2 tablespoons of vegetable oil in a large non-stick skillet or cast-iron pan over medium heat.
  4. Form and Fry the Fritters: Using a 1/4-cup measuring cup or a large spoon, drop portions of the batter into the hot oil. Gently flatten each mound with the back of your spoon to form a patty about 1/2-inch thick.
  5. Cook to Golden Brown: Fry for 2-3 minutes per side, or until deeply golden brown and crispy. Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil.
  6. Serve Immediately: These cheesy corn fritters are best served hot and fresh from the skillet.

Notes

For gluten-free version, use gluten-free flour blend. For dairy-free, use dairy-free cheese alternatives. To make in air fryer: preheat to 375°F (190°C), cook for 10-12 minutes flipping halfway. Store leftovers in airtight container in refrigerator for up to 3 days or freeze for up to 2 months.
