  • For the skewers:
  • 2 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 2 bell peppers, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch chunks
  • 810 wooden or metal skewers
  • For the marinade:
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce (low-sodium)
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • For garnish:
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • Fresh cilantro (optional)

Instructions

  1. Make the Marinade: In a bowl, whisk honey, garlic, soy sauce, olive oil, rice vinegar, ginger, pepper, and red pepper flakes. Reserve 1/4 cup for basting.
  2. Marinate Chicken: Place chicken in a zip-top bag or dish and cover with remaining marinade. Chill for at least 30 minutes or up to overnight.
  3. Prep Skewers: If using wooden skewers, soak them in water for 30 minutes. Then thread chicken, peppers, and onions onto skewers, leaving space between pieces.
  4. Grill: Preheat grill to medium-high heat (375–400°F) and oil grates. Grill skewers 10–12 minutes, turning every 2–3 minutes. Baste with reserved marinade during final 5 minutes.
  5. Rest and Garnish: Remove skewers from grill, rest for 3–5 minutes, and garnish with green onions, sesame seeds, and cilantro.

Notes

Oven Option: Bake skewers at 425°F for 20–25 minutes, turning halfway and basting near the end. For vegetarian: use pressed tofu or tempeh. To freeze: marinate chicken and freeze before threading on skewers.
