This Southwest Chicken Freezer Crockpot Dump Meal is a quick-prep, flavor-packed dinner perfect for busy weeknights. Just dump everything into a slow cooker for a wholesome, protein-rich meal with Tex-Mex flair.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with green chilies (Rotel-style)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Label a gallon freezer bag with recipe name, date, and instructions.
  2. Place chicken breasts at the bottom of the bag, then add remaining ingredients in order listed.
  3. Seal bag tightly, removing excess air. Freeze flat.
  4. When ready to cook, place frozen contents into slow cooker. Add 1/2 cup water or broth if desired.
  5. Cook on LOW for 6–8 hours or HIGH for 4 hours, until chicken is cooked through and shreds easily.
  6. Shred chicken with two forks and stir to combine. Serve with brown rice, in tortillas, or over salad.

Notes

Add fresh lime juice and chopped cilantro before serving for a bright flavor boost. Top with avocado or Greek yogurt for extra creaminess.
