These Grilled Ranch Garlic Parmesan Chicken Skewers are a 20-minute summer dinner win – juicy, flavorful, and perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons ranch seasoning mix
  • 4 garlic cloves, minced (about 2 tablespoons)
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh chopped parsley
  • Wooden or metal skewers
  • Optional: 1 lemon, cut into wedges for serving

Instructions

  1. Cut chicken into even 1-inch cubes and pat dry with paper towels.
  2. Mix olive oil, ranch seasoning, garlic, Parmesan, pepper, salt, and parsley in a large bowl to form a marinade.
  3. Add chicken cubes and toss to coat. Let marinate for 10 minutes at room temp or up to 4 hours refrigerated.
  4. If using wooden skewers, soak in water for 15 minutes. Preheat grill or grill pan to medium-high heat.
  5. Thread chicken onto skewers, spacing pieces slightly for even cooking.
  6. Grill skewers 3–4 minutes per side until chicken reaches 165°F and is golden brown.
  7. Let rest for 2 minutes. Serve with extra Parmesan and lemon wedges.

Notes

For a dairy-free version, substitute Parmesan with nutritional yeast. Make it gluten-free by using gluten-free ranch seasoning. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
