  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1/3 cup Dijon mustard
  • 1/4 cup honey (local if possible)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice (fresh is best)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. In a medium bowl, whisk together Dijon mustard, honey, olive oil, garlic, lemon juice, paprika, thyme, salt, and pepper.
  2. Place chicken in a ziplock bag or shallow dish. Pour marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat grill to medium-high (375–400°F). Clean and oil the grates.
  4. Remove chicken from marinade and grill 5–7 minutes per side, or until internal temperature reaches 165°F.
  5. Transfer to a plate and rest for 5 minutes. Garnish with parsley and serve.

Notes

For extra flavor, add 1 teaspoon of soy sauce to the marinade. Pound chicken to even thickness for more consistent grilling.
