  • ¼ cup fresh lemon juice (approx. 2 lemons)
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh herbs (rosemary, thyme, or oregano)
  • 1 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon honey or maple syrup

Instructions

  1. Make the Marinade: In a bowl, whisk together lemon juice, olive oil, garlic, herbs, lemon zest, salt, pepper, red pepper flakes, and honey until emulsified.
  2. Marinate the Chicken: Pound chicken breasts to even thickness if needed. Place in a zip-top bag or shallow dish, pour marinade over the chicken, and refrigerate for at least 30 minutes (up to 8 hours).
  3. Preheat Grill: Heat grill to medium-high (375–450°F). Clean and oil the grates.
  4. Grill Chicken: Remove from marinade and grill 5–7 minutes per side, or until internal temp reaches 165°F. Avoid pressing or flipping excessively.
  5. Rest and Serve: Transfer to a plate, tent loosely with foil, and rest for 5 minutes before slicing. Serve with your favorite sides.

Notes

Don’t marinate for more than 8 hours—the lemon juice can over-tenderize the meat. This recipe is perfect for meal prep: grill extra and use in salads, wraps, or grain bowls throughout the week.
