- 1½ cups (360ml) milk (dairy or non-dairy)
- 3 large eggs, separated (yolks and whites in separate bowls)
- 1 teaspoon vanilla extract
- Butter or oil, for greasing pan
Instructions
- In a large bowl, whisk together the Kodiak Cakes mix, milk, egg yolks, and vanilla until just combined.
- In a separate clean bowl, beat the egg whites until stiff peaks form.
- Gently fold the whipped egg whites into the pancake batter using a rubber spatula. Do not overmix.
- Preheat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour ¼ cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface. Flip and cook another 1–2 minutes until golden and cooked through.
