Instructions

  1. Combine the Marinade: In a medium-sized bowl, whisk together the olive oil, soy sauce, lemon juice, honey, minced garlic, grated ginger, smoked paprika, and black pepper until well-emulsified.
  2. Prepare the Chicken: Place chicken in a large resealable plastic bag or shallow glass dish. For even cooking, pound thick chicken breasts to ½-inch thickness.
  3. Marinate the Chicken: Pour marinade over chicken, ensuring all pieces are coated. Seal bag or cover dish and refrigerate for at least 2 hours, preferably 6-8 hours or overnight.
  4. Grill the Chicken: Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade. Grill for 5-7 minutes per side until internal temperature reaches 165°F.
