  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 4 large eggs, room temperature
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (if needed)

Instructions

  1. Preheat oven to 350°F. Line a 15×10 inch pan with parchment and lightly grease.
  2. In a bowl, whisk together flour, baking powder, pumpkin pie spice, and salt.
  3. In a separate large bowl, beat eggs, pumpkin puree, sugar, oil, and vanilla until smooth.
  4. Gradually add dry ingredients to wet mixture and stir just until combined.
  5. Pour into prepared pan and spread evenly. Bake 25–30 minutes or until a toothpick comes out clean.
  6. Cool completely before frosting.
  7. For the frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Mix until fluffy, adding milk if needed.
  8. Spread frosting over cooled bars. Chill before slicing for clean cuts.

Notes

Store bars in the fridge for up to 5 days. For longer storage, freeze unfrosted bars and frost when ready to serve. Optional add-ins: chocolate chips, chopped nuts, or dried cranberries.
