  • 2 tablespoons olive oil
  • 3 tablespoons chipotle ranch seasoning (store-bought or homemade)
  • 4 large flour tortillas (10-inch)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican-blend cheese
  • 1 cup chopped romaine lettuce
  • 1 large tomato, diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, mix olive oil and chipotle ranch seasoning. Coat chicken breasts and let sit 5 minutes (or marinate up to 24 hours).
  2. Grill chicken over medium-high heat for 4–5 minutes per side until 165°F. Rest 5 minutes, then slice.
  3. Warm tortillas in a dry skillet or microwave until pliable.
  4. Layer each tortilla with rice, beans, grilled chicken, cheese, lettuce, tomato, sour cream, and cilantro.
  5. Fold sides in, then roll up from the bottom. Grill seam-side down for 1–2 minutes for a crisp finish, if desired.
