  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped cilantro
  • For the Fiesta Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons milk
  • 1 tablespoon lime juice
  • 2 teaspoons taco seasoning
  • 1 teaspoon minced jalapeño (optional)
  • For Topping:
  • 1 cup shredded Colby-jack cheese
  • 2 tablespoons pico de gallo
  • 2 tablespoons chopped cilantro

Instructions

  1. In a large zip-top bag, mix lime juice, honey, olive oil, garlic powder, cumin, salt, pepper, and cilantro. Add chicken, seal, and marinate for 15 minutes (or up to 4 hours in the fridge).
  2. In a small bowl, whisk together mayo, sour cream, milk, lime juice, taco seasoning, and jalapeño. Chill until ready to use.
  3. Grill chicken 5–7 minutes per side or until internal temperature reaches 165°F. Use a grill pan or skillet if needed.
  4. Transfer chicken to an oven-safe dish. Spread with fiesta sauce and top with shredded cheese. Broil for 1–2 minutes until cheese is melted and bubbling.
  5. Garnish with pico de gallo and chopped cilantro. Serve immediately with your favorite sides.
