Ingredients

  • 1 cup strong brewed coffee, cooled
  • 2 tablespoons pumpkin puree (not pie filling)
  • 12 tablespoons maple syrup or brown sugar
  • ¼ teaspoon pumpkin pie spice, plus more for garnish
  • ¼ teaspoon vanilla extract
  • ¼ cup milk of choice (dairy or non-dairy)
  • Ice cubes
  • Whipped cream (optional)
  • Caramel drizzle (optional)

Instructions

  1. Brew your coffee: Prepare 1 cup of strong coffee and let it cool completely.
  2. Make pumpkin spice mix: In a small saucepan over medium-low heat, combine pumpkin puree, maple syrup, pumpkin pie spice, and a pinch of salt. Stir for about 2 minutes. Remove from heat and stir in vanilla extract.
  3. Assemble the drink: Fill a tall glass with ice. Pour in the cooled coffee, then stir in the pumpkin mixture. Add your milk of choice and stir again.
  4. Top and serve: Garnish with whipped cream, extra pumpkin pie spice, and caramel drizzle if desired. Serve immediately with a straw.

Notes

Use cold brew for a smoother taste. Store extra pumpkin mixture in the fridge for up to 5 days. For a protein boost, blend in a scoop of vanilla protein powder.
