  • 16 ounces whole-milk ricotta cheese
  • 3-4 tablespoons hot honey, plus more for drizzling
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • Freshly cracked black pepper
  • Crusty baguette, toasted crostini, pita chips, or assorted crackers for serving
  • Fresh vegetable sticks (endive, radishes, cucumber) for serving

Instructions

  1. Add the ricotta cheese, olive oil, lemon juice, salt, and pepper to a medium bowl.
  2. Using a hand mixer, stand mixer with whisk attachment, or sturdy whisk, beat the mixture for 1-2 minutes until it becomes noticeably smoother, lighter, and spreadable.
  3. Transfer the whipped ricotta to a shallow serving bowl. Use the back of a spoon to create graceful swirls and valleys across the surface.
  4. Drizzle the 3-4 tablespoons of hot honey generously over the whipped ricotta.
  5. Follow with an additional thin stream of extra-virgin olive oil.
  6. Serve immediately with an assortment of dippers like crostini, crackers, and vegetables.

Notes

For best results, use high-quality whole-milk ricotta. The dip can be made ahead by whipping the ricotta base (without toppings) up to 24 hours in advance. Store covered in refrigerator and let sit at room temperature for 20-30 minutes before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
