  • 2 packages (200 g each) fresh or frozen udon noodles
  • 23 tablespoons gochujang paste (adjust to taste)
  • 1 cup heavy cream (or coconut cream for dairy‑free)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce (or tamari)
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 3 green onions, sliced (white & green parts separated)
  • Optional: 8 oz tofu, chicken, or shrimp
  • For garnish: toasted sesame seeds, green onion tops, crispy shallots

Instructions

  1. Cook udon noodles per package directions—subtract 1 minute to keep them slightly firm. Drain, rinse with cold water, and toss with a drop of sesame oil.
  2. In a large skillet on medium heat, melt butter. Add white parts of green onions, garlic, and ginger and sauté 2–3 minutes until fragrant.
  3. Reduce heat. Add gochujang and toast for 1 minute, stirring to bloom flavor.
  4. Slowly pour in cream while stirring; add soy sauce, rice vinegar, honey. Simmer gently 2–3 minutes until sauce thickens to coat the back of a spoon.
  5. Toss udon noodles into the sauce, gently mixing to coat. If too thick, add a splash of noodle water to loosen.
  6. Drizzle with sesame oil and top with green onion greens, sesame seeds, and shallots before serving.

Notes

Adjust gochujang to your heat preference. For dairy-free versions, swap in coconut cream and plant-based butter. Undercook noodles slightly for better texture if storing leftovers.
