  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons honey
  • 3 garlic cloves, minced (or 1 tablespoon garlic powder)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Pat 1.5–2 pounds of chicken dry with paper towels. Butterfly or pound chicken breasts if needed for even thickness.
  2. In a bowl, whisk together all marinade ingredients until fully combined and emulsified.
  3. Place chicken in a zip-top bag or glass container. Pour marinade over chicken and coat evenly.
  4. Seal and refrigerate for at least 30 minutes or up to 24 hours (8 hours is ideal).
  5. Remove chicken from marinade and discard excess. Cook as desired — grill, bake, or pan-sear until internal temperature reaches 165°F.

Notes

Use coconut aminos instead of soy sauce for a gluten-free option. Don’t reuse marinade after it touches raw chicken unless boiled. For best results, marinate chicken for at least 2 hours.
