  • 1 large red onion, cut into 1-inch wedges
  • 1 large bell pepper (any color), sliced
  • 2 tablespoons olive oil
  • 1 tablespoon pure maple syrup
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). This high heat is key for getting those deliciously caramelized edges on the vegetables and sausage.
  2. On a large, rimmed baking sheet, combine the sliced chicken apple sausage, sweet potato cubes, apple chunks, red onion wedges, and bell pepper slices.
  3. Drizzle the olive oil and maple syrup over everything. Sprinkle with the dried thyme, garlic powder, smoked paprika, salt, and pepper.
  4. Use your hands or a large spoon to toss everything until all the ingredients are evenly coated in the oil and seasonings. For the best browning, make sure nothing is overcrowded—use two pans if necessary.
  5. Spread the mixture in a single layer and roast for 25-30 minutes, or until the sweet potatoes are tender and the edges of the sausage and apples are caramelized. You can give the pan a shake halfway through for even cooking.
