  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 2 cups shredded cheddar cheese, divided
  • ½ cup sour cream
  • 3 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add potatoes, season with salt and pepper, and cook for 5–7 minutes, stirring occasionally, until lightly golden.
  2. Add smoked sausage, onion, and garlic. Cook for 5 more minutes until sausage is browned and onion is soft.
  3. Reduce heat to medium-low. Add butter and ranch seasoning. Stir to coat evenly.
  4. Pour in chicken broth and cream. Simmer for 5–7 minutes until potatoes are tender and sauce thickens slightly.
  5. Stir in sour cream and 1½ cups shredded cheddar cheese until melted and creamy. If needed, add a splash of broth to loosen sauce.
  6. Top with remaining ½ cup cheese, cover, and let sit for 2–3 minutes until melted. Garnish with green onions and serve hot.
