These Bang Bang Chicken Skewers are smoky, juicy, and packed with sweet-spicy flavor from a bold, creamy marinade. Perfect for BBQs, weeknight grilling, or crowd-pleasing appetizers.

  • 2 pounds boneless, skinless chicken thighs, cut into 1.5-inch cubes
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup chopped green onions, plus more for garnish
  • 2 tablespoons toasted sesame seeds
  • 810 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, soy sauce, and sesame oil. Reserve 1/4 cup of the sauce for dipping.
  2. Add chicken, garlic, ginger, and green onions to the remaining sauce. Toss to coat. Cover and marinate for at least 30 minutes (up to overnight).
  3. Soak wooden skewers for 30 minutes. Preheat grill to medium-high heat (375–400°F).
  4. Thread marinated chicken onto soaked skewers, leaving space between pieces.
  5. Grill skewers 4–5 minutes per side, or until internal temperature reaches 165°F and grill marks appear.
  6. Brush with reserved sauce, then sprinkle with sesame seeds and extra green onions before serving. Serve with extra dipping sauce on the side.

Notes

Use Greek yogurt instead of mayo for a lighter version. Chicken breast or tofu can be substituted. Great with coconut rice, slaw, or grilled veggies!
