Crispy bacon wrapped around juicy, seasoned chicken breasts creates an impressive yet simple main dish that’s perfect for weeknight dinners or entertaining guests.

  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds total)
  • 8 slices of thin-cut bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (use sparingly as the bacon is salty)
  • Optional: 2 tablespoons brown sugar or maple syrup for a sweet glaze
  • Optional: Fresh chopped parsley for garnish

Instructions

  1. Preheat and Prep: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Season the Chicken: Pat the chicken breasts completely dry with paper towels. In a small bowl, mix together the garlic powder, smoked paprika, onion powder, thyme, black pepper, and salt. Drizzle the chicken with olive oil and rub the spice mixture evenly over all sides of each breast.
  3. Wrap with Bacon: Take two slices of bacon for each chicken breast. Wrap them around the breast, slightly overlapping the ends, and tuck the ends underneath the chicken.
  4. Bake to Perfection: Place the bacon-wrapped chicken breasts on the prepared wire rack. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the bacon is crispy.
  5. Rest and Serve: Once out of the oven, let the chicken rest for 5 minutes before serving.

Notes

For extra security, you can use a toothpick to pin the bacon ends in place. If using the optional brown sugar glaze, brush it on during the last 10 minutes of cooking. The wire rack is crucial for getting crispy bacon all around.
