  • 2 pounds lean beef (eye of round, top round, or flank steak)
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon liquid smoke
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon kosher salt

Instructions

  1. Partially freeze meat for 1-2 hours. Trim all visible fat, then slice into 1/8 to 1/4 inch thick strips.
  2. Whisk all marinade ingredients in a large bowl until sugar dissolves. Add beef and coat well. Marinate in refrigerator 8–24 hours, turning occasionally.
  3. Remove meat and pat dry thoroughly. Arrange strips on dehydrator trays or wire racks.
  4. Dehydrator: Dry at 160°F for 4–6 hours. Oven: Set to 170°F, prop door open, and dry for 6–8 hours.
  5. Check doneness: Jerky should bend and crack without snapping and show no moisture inside.
  6. Cool completely before storing in airtight containers.

Notes

Trim fat thoroughly for better shelf life. For game meats or tofu variations, adjust marinating and drying times accordingly. Always ensure internal temp reaches 160°F for safety.
